MACE FLOWER ( FULL YELLOW )

The "Mace Flower (Full Yellow)" is actually the dried, lacy, golden-orange aril (covering) of the nutmeg seed, known as Javitri in India, a prized aromatic spice with a warm, subtly sweet, and slightly spicy flavor, used in curries, baked goods, sauces, and traditional remedies for digestion. It's more delicate than nutmeg but offers rich aroma, antioxidants, and essential oils, enhancing both sweet and savory dishes globally.

What it is:

  • Source: The bright red aril that grows around the nutmeg seed inside the fruit of the Myristica fragrans tree.
  • Appearance: A delicate, lacy, web-like structure, reddish-tan to golden-yellow when dried.
  • Flavor Profile: Warm, aromatic, subtly sweet, with a milder, more nuanced spice than nutmeg itself.

Culinary Uses:

  • Savory: Enhances biryanis, curries, stews, sauces, poultry, and fish dishes.
  • Sweet: Adds depth to baked goods like pies, cakes, custards, and crème brûlée.
  • Spice Blends: A key component in many spice mixes.

Health & Other Uses:

  • Traditional Medicine: Used to aid digestion, relieve nausea, and as an anti-inflammatory.
  • Essential Oils: Source for oils used in perfumery and aromatherapy.

How it's Harvested:

  • Harvested from the ripe fruit which splits open, revealing the nutmeg and its mace covering.
  • The mace is carefully separated from the nutmeg, cleaned, and dried to preserve its color and aroma.
